Vegan Protein Chia Pudding

Ingredients:
• 2 tbsp chia seeds (120 calories, 4g protein)
• 1 scoop vegan protein powder (120 calories, 25g protein)
• 1/2 cup unsweetened almond milk (15 calories, 0g protein)
• 1/2 cup mixed berries (30 calories, 0g protein)
Optional additions:
• 1/4 tsp vanilla extract
• 1/4 tsp cinnamon
• Pinch of cardamom
• 1/8 tsp ginger powder
Instructions:
1. In a medium bowl or jar, whisk together the protein powder and almond milk until completely smooth with no lumps.
2. Add the chia seeds, vanilla extract, and spices if using. Stir well to combine.
3. Add half of the mixed berries and gently fold them in.
4. Cover the container and refrigerate for at least 4 hours or overnight for the best texture.
5. Before serving, stir the pudding to break up any clumps. If the mixture is too thick, add a splash of almond milk.
6. Top with the remaining berries and serve chilled.
Note: For the best results, stir the pudding once or twice during the first hour of refrigeration to prevent the chia seeds from clumping together.
