One-Pot Creamy Tuscan Chicken Pasta

Ingredients
(Serves 4)
2 tablespoons olive oil
1 lb chicken breasts, diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
2 cups spinach, fresh
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
8 oz penne or any pasta of choice
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions
Cook the Chicken: In a large pot or deep skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the pot and set aside.
Sauté the Garlic: In the same pot, add the minced garlic and cook for 1-2 minutes until fragrant.
Add the Liquid and Pasta: Pour in the chicken broth and heavy cream. Bring the mixture to a simmer, then stir in the pasta and sun-dried tomatoes. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente.
Add Spinach and Chicken: Once the pasta is cooked, stir in the fresh spinach and the cooked chicken. Cook for another 2-3 minutes until the spinach wilts.
Finish with Parmesan: Stir in the grated Parmesan cheese and season with Italian seasoning, salt, and pepper to taste.
Serve: Garnish with fresh basil if desired and serve immediately.
Notes
You can add crushed red pepper flakes for a bit of heat, or substitute half-and-half for the heavy cream for a lighter version. This dish is great for busy weeknights as everything cooks in one pot, making cleanup a breeze.
