Turkey/Chicken and Veggie Skewers w/ Couscous

Ingredients:
• 150g turkey/chicken breast, cubed (165 calories, 31g protein)
• 1 cup mixed bell peppers, cubed (40 calories, 2g protein)
• 2 tsp olive oil (40 calories, 0g protein)
• 1/2 cup cous cous
• Handful of Cucumber, tomatoes and red onion, diced
• 1/2 lemon juice
Instructions:
1. Cut turkey breast and bell peppers into 1-inch cubes
2. Thread turkey and veggies alternately onto skewers, leaving small gaps between pieces
3. Brush skewers with 1 tsp olive oil
4. Grill on medium-high heat for 12-15 minutes, turning occasionally, until turkey is cooked through (internal temp 165°F)
5. Meanwhile, prepare couscous according to package directions
6. Dice cucumber, tomatoes, and red onion
7. Mix remaining olive oil and lemon juice in the cous cous
8. Serve skewers over couscous with another squirt of lemon
