Ingredients:
• 150g ground turkey (165 calories, 30g protein)
• 1 cup diced courgette (20 calories, 1g protein)
• 1/2 cup cooked brown rice (108 calories, 3g protein)
• 1 tsp sesame oil (40 calories, 0g protein)
• 2 cloves garlic, minced
• 1 tbsp ginger, grated
• 2 tbsp low-sodium soy sauce
• 1 tsp rice vinegar
• Green onions for garnish
• Salt and pepper to taste
Instructions:
1. Heat sesame oil in a large skillet over medium-high heat
2. Add minced garlic and grated ginger, sauté for 30 seconds until fragrant
3. Add ground turkey, breaking it up with a spatula. Season with salt and pepper. Cook until no longer pink (5-7 minutes)
4. Add diced zucchini and cook for 3-4 minutes until tender but still crisp
5. Pour in soy sauce and rice vinegar, stirring to combine. Cook for another minute
6. Serve the turkey and zucchini stir-fry over warm brown rice
7. Garnish with sliced green onions
