Turkey and Sweet Potato Bowl

Ingredients:

• 140g (3.5 oz) ground turkey

• 200g roasted sweet potatoes

• 1/2 cup spinach

• 1 tsp olive oil


Suggested seasonings:

• 1/2 tsp garlic powder

• 1/2 tsp paprika

• 1/4 tsp dried thyme

• 1/4 tsp dried rosemary

• Salt and black pepper to taste

• Optional: pinch of red pepper flakes for heat


Instructions:


1. Heat a non-stick pan over medium heat and add 1 tsp olive oil

2. Once hot, add ground turkey and break it up into small pieces with a spatula

3. Season turkey with garlic powder, paprika, thyme, rosemary, salt, and pepper

4. Cook turkey for 6-8 minutes until no longer pink, stirring occasionally

5. Add spinach to the pan and cook for 1-2 minutes until wilted

6. While the turkey is cooking, warm up your pre-roasted sweet potatoes in the microwave for 45-60 seconds

7. Assemble your Turkey and Sweet Potato Bowl by placing the sweet potatoes at the bottom of the bowl, then top with the turkey and spinach mixture

8. Taste and adjust seasonings if needed, add red pepper flakes if desired
