Ingredients:
• 100g firm tofu, cubed (130 calories, 13g protein)
• 2 cups fresh romaine lettuce, chopped (10 calories, 1g protein)
• 2 tbsp vegan Caesar dressing (80 calories, 1g protein)
• 1 tbsp nutritional yeast (20 calories, 2g protein)
• 1 tbsp extra virgin olive oil (120 calories)
• 1 tsp balsamic vinegar (5 calories)
• ¼ tsp garlic powder (optional)
• ¼ tsp black pepper
• 1 pinch sea salt
• 1 tsp dried oregano
Instructions:
1. Press tofu between paper towels for 10 minutes to remove excess moisture
2. Season tofu cubes with garlic powder, black pepper, and a pinch of salt
3. Heat olive oil in a non-stick skillet over medium heat
4. Pan-fry tofu for 5-7 minutes until golden brown and crispy
5. Meanwhile, wash and chop romaine lettuce into bite-sized pieces
6. In a large bowl, whisk together vegan Caesar dressing and balsamic vinegar
7. Toss lettuce with the dressing mixture until well coated
8. Add the crispy tofu cubes on top
9. Sprinkle with nutritional yeast and dried oregano
10. Serve immediately while tofu is still warm
