Tofu and Vegetable Stir-Fry

Ingredients:
• 150g tofu
• 1 cup stir-fried vegetables
• 1/2 cup cooked jasmine rice
• 1 tbsp peanut butter
Instructions:
1. Press and drain the tofu to remove excess moisture.
2. Cut tofu into 1-inch cubes.
3. Heat a wok or large skillet over medium-high heat.
4. Add tofu cubes and stir-fry until golden brown on all sides, about 5-7 minutes.
5. Add mixed vegetables to the pan and stir-fry for 3-4 minutes until crisp-tender.
6. Add peanut butter and 2-3 tablespoons of water to create a sauce.
7. Stir everything together until the peanut sauce coats the tofu and vegetables evenly.
8. Serve hot over jasmine rice.
