Ingredients:
• 100g tempeh, cubed (195 calories, 20g protein)
• 1/2 cup cooked brown rice (108 calories, 3g protein)
• 1 cup steamed broccoli (55 calories, 5g protein)
• 1 tbsp soy sauce (10 calories, 0g protein)
• 1 tsp sesame oil
• 2 cloves garlic, minced
• 1 tsp ginger, grated
• 1/4 tsp red pepper flakes (optional)
• Sesame seeds for garnish
Instructions:
1. Heat sesame oil in a non-stick pan over medium heat.
2. Add minced garlic and grated ginger, sauté for 30 seconds until fragrant.
3. Add cubed tempeh to the pan and cook for 4-5 minutes, turning occasionally until golden brown on all sides.
4. Steam broccoli in a separate pot or steamer for 3-4 minutes until bright green and tender-crisp.
5. While the broccoli steams, warm the pre-cooked brown rice.
6. Add the steamed broccoli to the tempeh pan, stir in soy sauce and red pepper flakes if using.
7. Serve the tempeh and broccoli over the warm brown rice.
8. Garnish with sesame seeds and additional soy sauce if desired.
