Ingredients
4 cups fresh spinach
1/4 cup crumbled feta cheese
1/4 cup walnuts, toasted and chopped
1/4 cup balsamic vinaigrette (store-bought or homemade)
1/4 cup red onion, thinly sliced (optional)
1 tablespoon olive oil (for toasting walnuts)
Salt and pepper to taste
Instructions
Toast the Walnuts: In a small pan over medium heat, add olive oil and walnuts. Toast for 2-3 minutes, stirring frequently, until fragrant and slightly browned. Set aside to cool.
Assemble the Salad: In a large mixing bowl, add the fresh spinach, crumbled feta, and toasted walnuts. If using, add the red onion slices.
Dress the Salad: Drizzle the balsamic vinaigrette over the salad and gently toss until all ingredients are evenly coated. Season with salt and pepper to taste.
Serve: Serve immediately as a light lunch or side salad.
Notes
You can add sliced strawberries or dried cranberries for a touch of sweetness, or replace feta with goat cheese for a creamier texture.
