Shrimp and Cauliflower Rice Bowl

Ingredients:
• 150g raw shrimp, peeled and deveined (120 calories, 28g protein)
• 1 cup cauliflower rice (25 calories, 2g protein)
• 1/2 avocado (120 calories, 2g protein)
• 1 tsp olive oil (40 calories, 0g protein)
• 2 cloves garlic, minced
• 1/4 tsp sea salt
• 1/4 tsp black pepper
• 1/4 tsp paprika
• Fresh lemon wedge for serving
• Optional: red pepper flakes to taste
Instructions:
1. Heat olive oil in a non-stick pan over medium heat.
2. Add minced garlic and sauté for 30 seconds until fragrant.
3. Add cauliflower rice to the pan, season with half the salt and pepper. Cook for 3-4 minutes until tender but still slightly crisp.
4. Push cauliflower rice to one side of the pan. Add shrimp to the empty side.
5. Season shrimp with remaining salt, pepper, and paprika. Cook for 2-3 minutes per side until pink and opaque.
6. Combine shrimp and cauliflower rice, tossing together.
7. Transfer to a bowl and top with sliced avocado.
8. Finish with a squeeze of fresh lemon and red pepper flakes if desired.
