Paneer Tikka with Chickpea Salad

Ingredients:
• 125g paneer (265 calories, 20g protein)
• 1/2 cup cooked chickpeas (134 calories, 7g protein)
• 1 cup diced cucumber and tomatoes (40 calories, 2g protein)
• 1 tbsp Greek yogurt (60 calories, 5g protein)
• 2 tsp garam masala
• 1 tsp turmeric
• 1 tsp ground cumin
• 1/2 tsp red chili powder
• 2 cloves garlic, minced
• 1 tbsp lemon juice
• Fresh cilantro for garnish
• Salt and pepper to taste
Instructions:
1. Create the marinade by mixing Greek yogurt, garam masala, turmeric, cumin, red chili powder, minced garlic, lemon juice, salt, and pepper in a bowl.
2. Cut paneer into 1-inch cubes and coat thoroughly with the marinade. Let it rest for at least 30 minutes (or up to 4 hours for better flavor).
3. While the paneer marinates, prepare the chickpea salad:
- Combine chickpeas, diced cucumber, and tomatoes in a bowl
- Season with a pinch of cumin, salt, pepper, and fresh cilantro
- Toss gently and set aside
4. Preheat grill or grill pan to medium-high heat.
5. Thread marinated paneer onto skewers (if using) or place directly on the grill.
6. Grill for 2-3 minutes per side until golden brown with slight char marks.
7. Serve hot paneer tikka over the chickpea salad, garnish with fresh cilantro and a dollop of Greek yogurt.
