Miso-Glazed Tofu with Edamame

Ingredients:
• 150g tofu
• 1/2 cup cooked edamame
• 1 cup cooked soba noodles
• 1 tbsp miso paste
Instructions:
1. Press firm tofu between paper towels to remove excess moisture (15 minutes)
2. Cut tofu into 1-inch cubes
3. Mix miso paste with 1 tablespoon water to create a glaze
4. Brush tofu cubes with miso glaze
5. Preheat oven to 400°F (200°C)
6. Place glazed tofu on a lined baking sheet
7. Bake for 20-25 minutes, flipping halfway through, until golden brown
8. While tofu bakes, prepare soba noodles according to package instructions
9. Heat edamame according to package instructions
10. Combine baked tofu, soba noodles, and edamame in a bowl
11. Optional: brush with any remaining miso glaze
