**Ingredients**
- [ ] 2 pork loin steak diced
- [ ] 2 tbsp maple syrup
- [ ] 2 tablespoons Dijon mustard
- [ ] 2 cloves garlic, minced
- [ ] 1 tablespoon olive oil
- [ ] 1 tablespoon apple cider vinegar
- [ ] Salt and pepper to taste
- [ ] Fresh parsley for garnish (optional)
## **Instructions**
1. Prepare the Marinade: In a small bowl, whisk together the maple syrup, Dijon mustard, minced garlic, olive oil, and apple cider vinegar. Season the mixture with salt and pepper to taste.
2. Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
3. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
4. Sear the Pork: Heat a large skillet over medium-high heat. Remove the pork from the marinade, shaking off excess, and sear it in the skillet for about 2-3 minutes on each side, until browned.
5. Roast the Pork: Transfer the seared pork to the prepared baking sheet and roast in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
6. Rest and Serve: Remove the pork from the oven and let it rest for 5 minutes before slicing. Garnish with fresh parsley if desired. Serve with roasted vegetables or your favorite side.
Notes
For extra flavor, reserve some of the marinade (before adding the pork) to brush over the tenderloin during cooking or serve as a sauce.
