Lentil and Sweet Potato Shepherd’s Pie

Ingredients:
• 1/2 cup cooked lentils (115 calories, 9g protein)
• 1/2 cup mashed sweet potato (100 calories, 2g protein)
• 1 cup mixed vegetables (40 calories, 2g protein)
• 1 tsp olive oil (40 calories, 0g protein)
• 1 tsp dried thyme
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika
• Salt and black pepper to taste
Instructions:
1. Season cooked lentils with thyme, garlic powder, and half of the smoked paprika. Add salt and pepper to taste.
2. Heat olive oil in a small oven-safe dish or ramekin.
3. Layer the seasoned lentils at the bottom of the dish.
4. Add the mixed vegetables as the middle layer, seasoning with salt and pepper.
5. Mash the sweet potato with remaining smoked paprika, salt, and pepper.
6. Spread the seasoned sweet potato mash evenly on top of the vegetables.
7. Create texture on top using a fork (optional).
8. Bake at 375°F for 15-20 minutes, or until the top is lightly golden and the edges are bubbling.
9. Let rest for 5 minutes before serving.
