Lentil and Spinach, Sweet Potato Bowl

Ingredients:
• 250g cooked lentils
• 1 medium sweet potato
• 2 cups spinach, sautéed
• 1 tbsp tahini
Instructions:
1. Cut sweet potato into 1-inch cubes and roast at 400°F (200°C) for 25-30 minutes until tender.
2. Heat a pan over medium heat with a drizzle of olive oil.
3. Add spinach to the pan and sauté for 2-3 minutes until wilted.
4. Warm the pre-cooked lentils in the same pan for 1-2 minutes.
5. Combine sweet potato, sautéed spinach, and warm lentils in a bowl.
6. Drizzle with tahini and serve.
