Lentil and Spinach Curry

Ingredients:

• 1 cup cooked red lentils

• 1 cup cooked spinach

• 1/2 cup cooked brown rice

• 1 tbsp coconut milk


Instructions:


1. In a large pan, heat Indian spices (such as curry powder, turmeric, and cumin) over medium heat until fragrant.

2. Add pre-cooked red lentils and spinach to the pan.

3. Pour in 1 tablespoon of coconut milk and stir well to combine.

4. Simmer for 3-5 minutes until the mixture is heated through and flavors have melded.

5. Serve the hot lentil and spinach curry over cooked brown rice.
