Lentil and Feta Stuffed Bell Peppers

Ingredients:

• 2 large bell peppers

• 1 cup cooked lentils

• 1/4 cup crumbled feta

• 1/2 cup cooked quinoa

• 1 tbsp olive oil


Instructions:


1. Preheat oven to 180°C (350°F).

2. Cut the bell peppers in half lengthwise and remove seeds and membranes.

3. In a bowl, mix the cooked lentils, cooked quinoa, and crumbled feta cheese.

4. Place the halved peppers cut-side up in a baking dish.

5. Fill each pepper half evenly with the lentil, quinoa, and feta mixture.

6. Drizzle olive oil over the stuffed peppers.

7. Bake for 20 minutes or until peppers are tender and filling is heated through.
