Korean BBQ Jackfruit with Stir-Fried Veggies

Ingredients:
• 1/2 cup jackfruit
• 150g seitan
• 1 cup stir-fried vegetables
• 2 tbsp BBQ sauce
Instructions:
1. Drain and shred the jackfruit into bite-sized pieces
2. Heat a large pan or wok over medium-high heat
3. Add seitan to the pan and cook for 2-3 minutes until lightly browned
4. Add shredded jackfruit to the pan and cook for another 2-3 minutes
5. Pour in Korean BBQ sauce, stirring to coat evenly
6. Cook for an additional 2-3 minutes until sauce is heated through and slightly caramelised
7. Meanwhile, stir-fry your choice of mixed vegetables (like bell peppers, broccoli, and carrots) in a separate pan
8. Plate the stir-fried vegetables and top with the BBQ jackfruit-seitan mixture
9. Optionally garnish with sesame seeds and green onions
