High-Protein Vegan Pancakes

Ingredients:
• 1 scoop vegan protein powder
• 1/4 cup oat flour
• 1/4 cup unsweetened almond milk
• 1 tsp baking powder
• 1 tbsp almond butter
Instructions:
1. In a medium bowl, combine protein powder and oat flour.
2. Add baking powder and whisk to combine dry ingredients.
3. In a separate bowl, mix almond milk and almond butter until smooth.
4. Gradually stir wet ingredients into dry ingredients until you have a smooth batter.
5. Heat a non-stick skillet over medium heat.
6. Pour about 1/4 cup of batter for each pancake.
7. Cook until bubbles form on the surface (about 2-3 minutes).
8. Flip and cook other side until golden brown (about 1-2 minutes).
