Ingredients:
• 1/2 cup cooked black beans (120 calories, 7g protein)
• 1/2 cup cooked quinoa (111 calories, 4g protein)
• 50g smoked tofu, diced (100 calories, 12g protein)
• 1 tbsp tahini (90 calories, 3g protein)
• 1/4 tsp ground cumin
• 1/4 tsp smoked paprika
• 1 clove garlic, minced
• Salt and black pepper to taste
• Optional: Fresh cilantro and lime juice for garnish
Instructions:
1. Warm the black beans in a small pan over medium heat with cumin and smoked paprika (about 2-3 minutes)
2. In the same pan, lightly sear the diced tofu until golden brown (about 3-4 minutes)
3. Fluff the cooked quinoa with a fork and season with salt and pepper
4. Layer the quinoa at the bottom of your bowl
5. Add the seasoned black beans and seared tofu
6. Whisk the tahini with 1-2 teaspoons of warm water to thin it out for drizzling
7. Drizzle the tahini sauce over the bowl
8. If using, garnish with fresh cilantro and a squeeze of lime juice
