Greek Yogurt and Chickpea Bowl

Ingredients:
• 1 cup plain Greek yogurt (150 calories, 20g protein)
• 1/2 cup cooked chickpeas (120 calories, 6g protein)
• 1/2 cup diced cucumber (10 calories, 0g protein)
• 1 tbsp olive oil (40 calories, 0g protein)
• 1/4 tsp ground cumin
• 1/4 tsp za'atar (optional)
• Fresh mint leaves (2-3 leaves)
• Salt and pepper to taste
Instructions:
1. In a medium bowl, spread the Greek yogurt evenly as a base layer
2. Drain and rinse the chickpeas well, then pat them dry with a paper towel
3. Season the chickpeas with cumin, salt, and pepper
4. Dice the cucumber into small, uniform pieces (about 1/4 inch cubes)
5. Layer the seasoned chickpeas and diced cucumber over the yogurt
6. Drizzle with olive oil
7. Sprinkle za'atar if using
8. Tear fresh mint leaves and scatter them on top
9. Give a final light seasoning of salt and pepper if desired
10. Serve immediately while fresh and cold
