Ingredients:
• 1 whole-wheat tortilla (120 calories, 4g protein)
• 50g feta cheese (132 calories, 7g protein)
• 1/2 cup chickpeas (120 calories, 6g protein)
• 1 cup fresh spinach (14 calories, 2g protein)
• 1 tbsp olive oil
• 1 tsp dried oregano
• 1/2 tsp garlic powder
• Salt and black pepper to taste
• Optional: fresh mint leaves
Instructions:
1. Drain and rinse chickpeas, then lightly mash with a fork. Season with garlic powder, oregano, salt, and pepper.
2. Warm the tortilla slightly to make it more pliable.
3. Brush tortilla with olive oil.
4. Layer fresh spinach leaves in the center of the tortilla.
5. Add the seasoned chickpea mixture.
6. Crumble feta cheese over the chickpeas.
7. Add fresh mint leaves if using.
8. Fold in the sides of the tortilla, then roll tightly from bottom to top.
9. Slice diagonally in half and serve immediately.
Tip: For extra flavor, you can warm the assembled wrap in a pan for 1-2 minutes per side until lightly golden.
