Ingredients:
• 1 cup edamame (190 calories, 18g protein)
• 1 cup mixed vegetables (40 calories, 2g protein)
• 1 tsp sesame oil (40 calories, 0g protein)
• 1 tbsp soy sauce (10 calories, 0g protein)
• Optional seasonings:
- 1 tsp minced ginger
- 1 clove minced garlic
- ¼ tsp red pepper flakes
- 1 tbsp chopped spring onions
- Dash of black pepper
Instructions:
1. Heat sesame oil in a non-stick pan over medium heat until shimmering (about 30 seconds)
2. If using, add minced ginger and garlic, sauté for 30 seconds until fragrant
3. Add edamame and mixed vegetables to the pan
4. Season with red pepper flakes and black pepper if desired
5. Stir-fry for 4-5 minutes until vegetables are crisp-tender and edamame is heated through
6. Remove from heat and drizzle with soy sauce
7. Garnish with chopped green onions if using
8. Serve immediately while hot
