Ingredients:
• 1 cup edamame (190 calories, 18g protein)
• 1 cup broccoli (55 calories, 5g protein)
• 1/2 cup cooked jasmine rice (105 calories, 2g protein)
• 1 tsp sesame oil (40 calories, 0g protein)
• 2 cloves garlic, minced
• 1 tbsp low-sodium soy sauce
• 1/2 tsp ginger, grated
• 1/4 tsp red pepper flakes (optional)
• Salt and black pepper to taste
• spring onions for garnish
Instructions:
1. Cook jasmine rice according to package instructions and set aside.
2. Heat sesame oil in a large pan over medium heat.
3. Add minced garlic and grated ginger, sauté for 30 seconds until fragrant.
4. Add broccoli florets and cook for 3-4 minutes until bright green.
5. Add edamame and cook for another 2-3 minutes until heated through.
6. Season with soy sauce, red pepper flakes (if using), salt, and black pepper.
7. Serve the vegetable mixture over the warm jasmine rice.
8. Garnish with sliced green onions.
