Cod with Sweet Potato Mash

Ingredients:
• 150g cod fillet (150 calories, 30g protein)
• 1/2 cup sweet potato (100 calories, 2g protein)
• 2 cup fresh spinach (14 calories, 2g protein)
• 1 tsp olive oil (40 calories, 0g protein)
• 1 clove garlic, minced
• 1/2 lemon
• 1 tsp fresh thyme
• Salt and black pepper to taste
Instructions:
1. Preheat oven to 400°F (200°C).
2. Peel and cube sweet potato. Boil until tender (about 15 minutes), then mash with a pinch of salt and pepper.
3. Season cod fillet with salt, pepper, and fresh thyme.
4. Place cod on a baking sheet and drizzle with half the olive oil. Bake for 12-15 minutes or until fish flakes easily.
5. Meanwhile, sauté minced garlic in remaining olive oil, add spinach and cook until wilted.
6. Plate the sweet potato mash, top with cod, and arrange spinach on the side.
7. Finish with a squeeze of fresh lemon juice.
