Chickpea and Quinoa Bowl

Ingredients:
• 1/2 cup cooked quinoa
• 1 cup cooked chickpeas
• 1 cup steamed spinach
• 2 tbsp hummus
Instructions:
1. Rinse and drain chickpeas if using canned.
2. Cook quinoa according to package instructions until fluffy (usually 15-20 minutes).
3. Steam fresh spinach for 2-3 minutes until just wilted.
4. In a medium bowl, start by spreading the cooked quinoa as the base layer.
5. Add the warm chickpeas on top of the quinoa.
6. Layer the steamed spinach over the chickpeas.
7. Top with a generous dollop of hummus in the center.
8. Finish with a drizzle of fresh lemon juice.
9. Optional: season with salt and pepper to taste.
