Ingredients
For the Chicken Souvlaki:
• 150g (5.3 oz) chicken breast, cut into bite-sized pieces
• 1 tbsp olive oil
• Juice of ½ lemon
• 1 garlic clove, minced
• 1 tsp dried oregano
• ½ tsp smoked paprika
• Salt and pepper, to taste
For the Tzatziki Sauce:
• 100g (3.5 oz) plain non-fat Greek yogurt
• 1/4 cucumber, grated and squeezed dry
1 garlic clove, minced
• 1 tbsp dried mint
• 1 tsp olive oil
• Juice of ½ lemon
• Salt and pepper, to taste
For the Side Salad:
• 50g (1.75 oz) romaine lettuce
• 50g (1.75 oz) cherry tomatoes, halved
• 50g (1.75 oz) cucumber, sliced
• 10g (0.35 oz) crumbled feta cheese
• 1 tsp olive oil
• 1 tsp red wine vinegar
**For the Carb Component:**
• 1 small whole-wheat pita bread
Instructions
Marinate the Chicken:
In a bowl, combine olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Add the chicken pieces and coat well. Let marinate for at least 30 minutes or overnight in the fridge.
Cook the Chicken:
Thread the marinated chicken onto skewers. Grill on medium heat or cook in a non-stick skillet for 8-10 minutes, turning occasionally, until fully cooked.
3. Prepare the Tzatziki Sauce:
In a small bowl, mix Greek yogurt, grated cucumber, garlic, dill, olive oil, lemon juice, salt, and pepper. Set aside.
4. Assemble the Salad:
In a bowl, combine lettuce, cherry tomatoes, cucumber, and feta. Drizzle with olive oil and red wine vinegar. Toss to coat.
5. Serve:
Place the chicken skewers on a plate. Add the salad, tzatziki sauce, and pita bread.
6. Enjoy:
Dip the chicken and pita into the tzatziki sauce and enjoy a balanced, high-protein meal!
