Ingredients:
• 160g shredded chicken breast (240 calories, 40g protein)
• 2 cups fresh spinach (14 calories, 2g protein)
• 1 cup low-sodium chicken broth (15 calories, 1g protein)
• 1 tsp olive oil (40 calories, 0g protein)
• 1 clove garlic, minced
• 1 tsp dried thyme
• 1/2 tsp black pepper
• 1/4 tsp sea salt
• Optional: pinch of red pepper flakes
Instructions:
1. Heat olive oil in a medium pot over medium heat
2. Add minced garlic and cook until fragrant (about 30 seconds)
3. Pour in the chicken broth and bring to a gentle simmer
4. Add thyme, black pepper, and salt
5. Add shredded chicken and heat through (2-3 minutes)
6. Add spinach and cook until just wilted (1-2 minutes)
