Ingredients:
• 1/2 cup black beans (110 calories, 8g protein)
• 100g crumbled tofu (120 calories, 12g protein)
• 1/2 cup cooked brown rice (108 calories, 3g protein)
• 1 tbsp guacamole (50 calories, 1g protein)
• 2 tsp Mexican spice blend (cumin, chili powder, paprika)
• 1/2 tsp garlic powder
• 1/4 tsp oregano
• Salt and pepper to taste
• 1 tbsp lime juice
• Optional: fresh cilantro for garnish
Instructions:
1. Drain and press tofu between paper towels for 10 minutes to remove excess moisture
2. Crumble tofu into small pieces and season with 1 tsp of Mexican spice blend, garlic powder, and salt
3. Heat a non-stick pan over medium heat and sauté tofu for 5-7 minutes until golden brown
4. While tofu cooks, heat black beans in a small pot with remaining Mexican spice blend and oregano
5. Warm the pre-cooked brown rice, adding a splash of water if needed
6. Assemble the bowl: Start with rice as the base, add the seasoned black beans and crispy tofu
7. Top with guacamole, a squeeze of fresh lime juice, and chopped cilantro if desired
8. Serve immediately while warm
