Ingredients:
• 1/2 cup cooked black beans (114 calories, 8g protein)
• 1/2 cup roasted sweet potato cubes (100 calories, 2g protein)
• 1 cup steamed kale (33 calories, 3g protein)
• 1 tbsp tahini (90 calories, 3g protein)
• 1/2 tsp cumin
• 1/2 tsp smoked paprika
• 1/4 tsp garlic powder
• Salt and pepper to taste
• Optional: fresh lime juice and cilantro for garnish
Instructions:
1. Season black beans with cumin, smoked paprika, and garlic powder. Warm in a small pan over medium heat for 2-3 minutes.
2. Toss sweet potato cubes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 20-25 minutes until tender and slightly caramelized.
3. Steam kale until bright green and tender, about 5 minutes. Season with a pinch of salt.
4. Create your Black Bean and Sweet Potato Bowl by arranging the seasoned beans, roasted sweet potatoes, and steamed kale in sections.
5. Drizzle with tahini, and if desired, finish with a squeeze of lime juice and fresh cilantro.
6. Serve immediately while warm.
