Black Bean and Seitan Tacos

Ingredients:
• 1/2 cup black beans
• 100g seitan
• 2 small corn tortillas
• 1/4 avocado, sliced
Instructions:
1. Heat a skillet over medium heat.
2. Cut seitan into bite-sized strips or chunks.
3. Add seitan to the skillet and cook until lightly browned, about 4-5 minutes.
4. Add black beans and season with Mexican spices (like cumin, chili powder, and paprika).
5. Cook for another 3-4 minutes until beans are heated through and flavors are combined.
6. Warm corn tortillas in a separate pan or microwave.
7. Fill each tortilla with the seitan-black bean mixture.
8. Top with sliced avocado.
9. Optional: Add your favourite taco toppings like salsa, lime juice, or fresh cilantro.
