Beef Stir-Fry with Bok Choy

Ingredients:

• 100g lean beef strips (200 calories, 30g protein)

• 1 cup chopped bok choy (20 calories, 1g protein)

• 1/2 cup cooked brown rice (108 calories, 3g protein)

• 1 tsp sesame oil (40 calories, 0g protein)

• 2 cloves garlic, minced

• 1 thumb-sized piece ginger, grated

• 2 tbsp low-sodium soy sauce

• 1/4 tsp black pepper


Instructions:


1. Marinate beef strips in 1 tbsp soy sauce, minced garlic, and black pepper for 10-15 minutes.

2. Heat sesame oil in a large wok or skillet over medium-high heat.

3. Once hot, add grated ginger and stir-fry for 30 seconds until fragrant.

4. Add marinated beef strips and cook for 2-3 minutes until browned on all sides.

5. Add bok choy and remaining soy sauce, stir-fry for another 2 minutes until bok choy is bright green but still crisp.

6. Serve immediately over warm brown rice.


Note: For best results, ensure your wok is very hot before adding the beef to achieve a nice sear while keeping the meat tender.
