Baked Salmon with Asparagus & Potatoes

Ingredients:
• 150g salmon fillet
• 200g baby new potatoes
• 1 cup fresh asparagus spears
• 1 tsp olive oil
• 1 tbsp fresh lemon juice
• 1 clove garlic, minced
• 1 tsp fresh dill
• ½ tsp sea salt
• ¼ tsp black pepper
• ½ tsp dried rosemary
• Lemon wedges for serving
Instructions:
1. Preheat oven to 375°F (190°C).
2. Halve the baby potatoes and toss with a little olive oil, rosemary, salt, and pepper. Place on a lined baking sheet.
3. Roast potatoes for 15 minutes until starting to turn golden.
4. Meanwhile, pat salmon fillet dry with paper towels.
5. In a small bowl, combine minced garlic, dill, salt, and pepper.
6. Push potatoes to one side of the baking sheet. Add salmon and asparagus.
7. Rub salmon with olive oil and sprinkle with herb mixture. Drizzle remaining oil over asparagus.
8. Return to oven for 15-20 minutes, or until salmon flakes easily and potatoes are tender.
9. Remove from oven and drizzle with fresh lemon juice.
10. Serve immediately with lemon wedges on the side.
