Ingredients
- [ ] 1 slice of whole grain or sourdough bread, toasted
- [ ] 1 ripe avocado
- [ ] 2 large egg
- [ ] 1 tablespoon lemon juice
- [ ] 1/4 teaspoon sea salt (or to taste)
- [ ] 1/4 teaspoon black pepper (or to taste)
- [ ] Optional: red pepper flakes, everything bagel seasoning, or fresh herbs for topping
Instructions
1. Boil the egg
Bring a small pot of water to a boil. Carefully lower the egg into the water and cook for **6-8 minutes** depending on how soft you want the yolk. For a slightly runny yolk, cook closer to 6 minutes. Once done, transfer the egg to an ice bath to cool.
2. Prepare the avocado
While the egg cools, cut the avocado in half and scoop out the flesh into a small bowl. Mash the avocado with the lemon juice, salt, and pepper until it’s smooth but still has some texture.
3. Toast the bread:
Toast your slice of bread until golden brown.
4. Assemble the toast:
Spread the mashed avocado evenly over the toasted bread.
5. Peel and slice the egg:
Once the egg is cool enough to handle, peel it and carefully slice it in half or quarters. Place the egg on top of the avocado toast.
6. Finish and serve:
Sprinkle with additional salt, pepper, and any optional toppings like red pepper flakes, everything bagel seasoning, or fresh herbs. Serve immediately.
